Happy Halloween, friends! My celebrations are a bit scarier than usual this year – one of those events that sometimes comes with violent protest and hatred is coming to our campus. I’m responding as best I can, with worry, hugs, and gluten-free waffles. I do think pancake/waffle breakfasts can bring people together. I have seen it happen. I just don’t think today will be one of those days. I would make you all waffles if I could, my dears. Stay safe out there.

I’m not saying that we should swear off pastry, or anything. But there is something to be said for just the apples. And the spiced caramel from the apple juices. And the coconut cream melting into everything. You’re just going to have to trust me on this one.

I realize that frittatas/tortillas españolas are not revolutionary for most people, but this dish kind of has been a revolution for me. It has been on constant rotation around here for a solid month, and my formerly sweet smoothie or cereal-y breakfasts might be changed forever. (Also, is anyone else strongly associating Spain and revolution right now? Eeek.)
