Or, the latest incarnation of my desire for healthy junk food.
These little truffle-like thingies are food for: (a) your girlfriends on wine and movie night, (b) that person in your life who loves healthy food but deserves a treat, and (c) basically all people who love dark chocolate.
They are very easy to make, only improved in flavor and texture over the course of the week they lasted in our fridge, and may be the most “California” food I’ve made to date. (And we eat a lot of avocado toast around here.)
Raw Brownie Bites

Author: the bright kitchen
Serves: 12 bites
Ingredients
- 100g/about ¾ cup hazelnuts
- 5 medjool dates, pitted
- 25 g or ⅓ cup cocoa powder
- pinch of salt
- 1 heaping tablespoon tahini
- 1 tablespoon water (optional, but I used about half)
- extra cocoa or finely grated coconut, to finish
Instructions
- Pulse the nuts in a food processor until they form a fine meal.
- Add the cocoa and salt, and pulse (carefully, to avoid chocolate clouds).
- Add the dates and pulse until they are mostly mixed in - a few chunks are fine (I would say they are good, but that is personal preference. Make sure you blend enough for the dates to be widely distributed as a sweetener & binder.).
- Add the tahini and pulse, and if the mixture is still not coming together to form a dough, add a drizzle of water until you reach a good texture. (good texture is when you can pinch the clay-like mixture into a ball and it holds together with no difficulty at all).
- Form the mixture into tablespoon-sized balls.
- The balls will be sticky, so you'll want to roll them in some more cocoa or, as I did, some finely grated coconut.
- Store the bites in the fridge for optimal texture.
- This makes 12-13 bites, depending on how much mixture you eat in the process.
- If you wanted to dip these in some melted chocolate, I think that would be an excellent idea.
